Chai Tea White Russian

I enjoyed this different take on a White Russian.  I just used Liptons Chai Tea in a bag but Davids Tea has some nice varieties that could work well.

CHAI VODKA

1 cup vodka
1/4 cup quality loose leaf chai tea

COCKTAIL
1 1/2 oz Chai Vodka
1/2 oz coffee flavoured liqueur (I used Kahlua)
1 oz half and half cream
Cinnamon stick

1.  For the Chai Vodka, to a measuring cup, add vodka and chai tea.  Stir.  Let stand for minimum 2 hours, then strain.  Set aside until ready to use.

2.  For the cocktail, pour Chai Vodka and coffee liqueur into an old fashioned glass filled with ice.  Stir to combine.  Top with cream.  Garnish with cinnamon stick.

Cranberry White Russian

A cranberry twist to a classic.  I found this in the Food and Drink Holiday 2022 magazine.  While it takes a bit of preparation because you have to make the cranberry simple syrup it is worth it.

CRANBERRY SIMPLE SYRUP

1/2 cup water

1/2 cup sugar

1/2 cup cranberries fresh or frozen

COCKTAIL

1 oz vodka

3/4 oz coffee liqueur

1/2 oz cranberry simple syrup

melted white chocolate for garnish

1 oz Irish Cream Liqueur (I used PJs)

1 oz cream or milk

  • For the cranberry syrup, in a saucepan over medium heat, add the water, sugar and cranberries.  Stir to combine.  Bring to a gentle simmer and continue stirring until sugar is fully dissolved.  Remove from heat and let stand 30 minutes.  Strain mixture and store in a lidded glass jar until ready to use or up to 2 weeks.
  • Add vodka, cold brew and cranberry simple syrup to an ice filled cocktail shaker.  Shake well for 1 minute.  Strain into a chilled glass rimmed with white chocolate.  Add the Irish cream and milk.

Caesar Turkey Brochettes

I have never BBQ’d celery before and it was a fun choice for this dinner.  Turkey, chicken or lean pork work for this dinner.

2 tbsp lime juice
2 tbsp vodka
1 tbsp sesame oil
3/4 tsp celery salt
1/4 tsp pepper
1 boneless turkey breast, skinned, or 4 turkey thighs, skinned and boned, cut into 1 1/2 inch cubes
2 ribs celery or banana peppers, cut into 1 1/2 inch chunks
1 red onion, cut into 1 1/2 inch chunks

BASTING SAUCE:
1/3 cup ketchup
3 tbsp oyster sauce
1 tsp Worcestershire sauce
1/2 tsp hot pepper sauce

  • Mix together lime juice, vodka, sesame oil, celery salt and pepper; toss with turkey until coated.  Marinate for 30 minutes or covered and refrigerated, up to 8 hours.
  • Alternately thread turkey, celery and red onion onto skewers.
  • BASTING SAUCE: Mix together ketchup, oyster sauce, Worcestershire sauce and hot pepper sauce.
  • Grill skewers, covered, on greased grill over medium heat, turning often and brushing with basting sauce during last 5 minutes until glad and turkey is no longer pink inside, about 18 minutes.
Makes 6 to 8 main course servings

Fettuccine with Spicy Vodka Shrimp and Vegetables

This is from Food and Drink Spring 2001.  Loved the flavour of the shrimp.  If you want to change the pasta to a quinoa that works really well too.

3 tbsp olive oil
750 g large deveined raw shrimp, peeled but with tails left on
2 cloves garlic, finely chopped
1/2 to 1 tsp chilli pepper flakes
Salt and freshly ground pepper
1/3 cup vodka
2 small red bell peppers, cut into thin strips
1 fennel bulb, trimmed and cut into thin strips
1 cup chicken stock
1 cup whipping cream
1 tbsp grated orange zest
375 g fettuccine
1/3 cup chopped flat leaf parsley

  1. Place half of the oil in a large non stick heavy skillet and heat over high heat until almost smoking.  Add shrimp, garlic, chilli pepper flakes, salt and pepper to taste.  Cook, stirring for about one minute or until shrimp are pink and almost cooked through.  Add vodka and ignite with a match.  Cook, shaking pan, until flames subside.  Transfer shrimp and juices to a bowl.
  2. Add remaining oil to skillet and heat until hot.  Add red pepper and fennel strips and cook, stirring for two minutes or until tender crisp.  Transfer to bowl with shrimp.
  3. Add stock, cream and orange zest to skillet.  Bring to a gentle boil (take care that it doesn't boil over) until sauce has reduced by about half in volume.  Season with salt and pepper to taste.  Return shrimp and vegetable mixture to skillet and heat through.
  4. Meanwhile cook fettuccine in a large pot of boiling slated water until just tender but firm.  Drain well.  Return to pot.  Toss with shrimp and vegetable mixture and sprinkle with parsley.  Divide among warm pasta bowls or plates and serve immediately.

Kahlua White Russian Cake

Because sometimes chocolate just isn't enough!  This is divine

3 tbsp Kahlua or other coffee liqueur
2 tbsp Vodka
3 oz white chocolate, chopped (1/2 cup)
2 cups sifted cake flour or 1 3/4 cups all purpose flour
3/4 tsp baking soda
1/2 tsp baking powder
1 1/4 cups sugar
1/2 cup butter
 2 tbsp shortening
3 eggs
3/4 cup buttermilk
1/3 cup apricot jam
1 recipe Kahlua White Russian Cream
White chocolate curls

  • In a medium heavy saucepan combine the Kahlua, vodka, and the 3 oz chopped white chocolate.  Cook and stir over low heat till chocolate is melted.  Cool slightly
  • Grease and lightly flour three 8 x 1 1/2 inch round baking pans; set aside.  In a small mixing bowl stir together flour, baking soda, and baking powder; set aside.
  • In a large mixing bowl combine sugar, butter, and shortening; beat with an electric mixer on medium speed till light and fluffy.  Add eggs, one at a time, beating till combined.  Beat in the cooled liqueur mixture.  Alternately add flour mixture and buttermilk to egg mixture, beating on low to medium speed after each addition just till combined.
  • Spread the batter evenly in the prepared pans.  Bake in a 350F oven for 20 to 25 min or until a toothpick inserted near the centres comes out clean.  Cool the cake layers in the pans on wire racks for 10 minutes.  Remove the layers from the pans and cool completely on wire racks.
  • To assemble place one layer bottom side up on a serving plate.  Spread layer with about 3 tbsp of the jam and about 1/3 cup of the Kahlua White Russian Cream.  Place a second layer on top of the first layer, bottom side up; spread with remaining jam and 1/3 cup of the cream.  Top with remaining cake layer, bottom side up.  Swirl remaining cream onto the top and sides of the cake.  Cover and chill for up to 24 hours.  If desired, decorate the top with chocolate curls.  To serve, cut the cake into wedges, dipping the knife into water between slices.  Makes 12 to 16 servings.
Kahlua White Russian Cream:

In a chilled medium mixing bowl combine 2 cups whipping cream and 1/2 cup sifted powdered sugar; beat with an electric mixer on low speed till thickened.  Gradually add 1/4 cup Kahlua or other coffee liqueur and 2 tsp vodka; beat on low peed till soft peaks form, Do not overbeat.
