Squash with Topping

I love squash and normally just roast it.  But for something different give this a try.

Squash (I like Acorn)
butter
brown sugar
1/4 cup shredded cheddar
1 cup cracker crumbs
1 small chopped onion
1 egg white, beaten

Cook squash.  Mash with butter and brown sugar.  Mix topping ingredients; cover mashed squash.  Heat at 350F for 1/2 hour.
