SALSA
1 mango, peeled and diced
1 cup pomegranate seeds
1/4 cup chopped shallots
2 tbsp lime juice
2 tsp grated lime zest
2 tbsp chopped cilantro
2 tbsp chopped parsley
2 tbsp olive oil
1 tsp grated ginger
1 tsp chopped jalapeno pepper
1/4 tsp chili flakes
CHICKEN
4 chicken breast, boneless, skinless
Salt and freshly ground pepper
1 tbsp olive oil
- Preheat oven to 450F.
- Combine all Salsa ingredients, set aside.
- Season chicken with salt and pepper. Saute over medium height in pan with olive oil.
- Place chicken on serving dish with salsa
Serve over Quinoa or Couscous.
